Family Recipe: How to make lamb shish kebobs

2 green onions
2 large yellow onions
1 2-lb leg of lamb or shoulder of lamb cut into 1 1/2” cubes
1/2 cup olive oil
1/2 teaspoon oregano
1/2 teaspoon dried mint or 1 tablespoon fresh
2 cloves garlic – crushed
1 tablespoon Chinese light soy sauce

Cut green peppers first in half then in thirds the long way. Remove seeds and cut each piece across to total 12 squares of green peppers.
Peel yellow onion, cut in half across the middle. Cut each piece in quarters. Peel layers so you have the pieces about the same size as the green pepper squares.
Make sauce of olive oil, oregano, mint, garlic, and soy sauce. Mix well. Pour over meat and vegetables. Mix well again – let sit three hours.
Arrange on skewers: Onion, meat, green pepper, meat, onion, meat, green pepper, and meat. End with an onion.
Broil on cookie sheet until lightly browned on all sides no more than 15 minutes for total cooking time.
Serves 6-8.
