Ingredients:
2/3 cup Bisquick

Zucchini

1/4 cup margarine, melted

1/8 teaspoon garlic salt

2 eggs

3 cups shredded zucchini, drained

1/4 cup thinly sliced green onions with tops

Directions:

Beat baking mix, margarine, garlic salt, and eggs with hand blender until blended. Stir in zucchini and green     onions.

For each patty, spoon scant 1/4 cup mixture onto a hot greased griddle (400˚), spread slightly and cook until dry around edges. Turn, fry other side until golden brown. Top each patty with a dollop of sour cream and thinly sliced green onions if desired. This makes about 12 patties.

We must admit we didn’t have any green onions, so we grated a regular dry onion and on top of the sour cream we clipped some curly parsley from the garden (Piter Zeltch) and used that on top of the sour cream. Indeed it made a pretty picture and tasted as good as it looked.

She goes on to say they are a favorite of her husband, Don and the patties can be frozen and heated up in a microwave in a minute or two.
